  • 500 g Lean Beef Mince Use turkey or chicken for a lighter option.
  • 1 large Onion Any onion variety works well.
  • 2 pieces Bell Peppers Feel free to use any color, or swap for zucchini or carrots.
  • 1 head Broccoli Can substitute with snap peas or green beans.
  • 4 cloves Garlic Fresh is recommended.
  • 1 tbsp Fresh Ginger Grated; ground ginger can be a suitable substitute.
For the Sauce
  • 80 ml Low-Sodium Soy Sauce Tamari is great for a gluten-free option.
  • 2 tbsp Honey Maple syrup can be a vegan substitute.
  • 1-2 tbsp Sriracha Adjust according to your spice preference.
  • 1 tbsp Rice Vinegar White vinegar can be used in its place.
  • 1 tsp Cornflour Arrowroot powder can be a suitable alternative.
For Serving
  • 4 cups Cooked Rice Jasmine or basmati rice works well.

Method
 

Step-by-Step Instructions
  1. In a medium bowl, whisk together low-sodium soy sauce, honey, sriracha, rice vinegar, and cornflour until smooth. Chop the onion, bell peppers, and broccoli into bite-sized pieces, and mince the garlic and grate the ginger.
  2. Heat 1 tablespoon of sesame oil in a large wok over medium-high heat for 1 minute. Add the lean beef mince and cook for about 5-7 minutes, stirring until browned and fully cooked. Drain any excess fat.
  3. Add the minced garlic and grated ginger to the pan. Stir-fry for about 30-60 seconds until fragrant.
  4. Toss in the chopped onion and broccoli, stirring for 4-5 minutes until the onion is translucent and the broccoli is vibrant green.
  5. Stir in the sliced bell peppers and sauté for another 2-3 minutes until they start to soften.
  6. Pour the whisked sauce over the beef and vegetables. Stir constantly for 1-2 minutes until the sauce thickens.
  7. Serve the stir fry over prepared rice, garnished with spring onions and toasted sesame seeds.
