- In a large mixing bowl, combine the rolled oats and shredded coconut.
- In a small saucepan, heat the honey and coconut oil over low heat until melted.
- Remove from heat and stir in the lemon zest, lemon juice, vanilla extract, and a pinch of salt.
- Pour the wet mixture over the dry ingredients and mix well.
- Scoop out tablespoon-sized portions onto a lined baking sheet and flatten slightly.
- Chill in the refrigerator for at least 30 minutes until set.

Store cookies in an airtight container. They can also be frozen for extended storage and thawed as needed.
