Ingredients
  

  • 2 cups rolled oats
  • 1 cup unsweetened shredded coconut
  • 1/2 cup honey
  • 1/4 cup coconut oil
  • 1 tablespoon lemon zest
  • 2 tablespoons lemon juice
  • 1 teaspoon vanilla extract
  • 1 pinch salt

Method
 

  1. In a large mixing bowl, combine the rolled oats and shredded coconut.
  2. In a small saucepan, heat the honey and coconut oil over low heat until melted.

  4. Pour the wet mixture over the dry ingredients and mix well.
  5. Scoop out tablespoon-sized portions onto a lined baking sheet and flatten slightly.
  6. Chill in the refrigerator for at least 30 minutes until set.
