- Preheat your oven to 350°F (175°C) and lightly grease a 9x13-inch baking dish.
- Shred the cooked rotisserie chicken and set aside. Drain and rinse black beans and corn thoroughly.
- In a large bowl, whisk together sour cream, salsa, optional cream of chicken soup, taco seasoning, and jalapeños if using.
- Spread half of the cooked rice in the baking dish, followed by half of the chicken, black beans, corn, and half of the creamy mixture. Sprinkle half of the shredded cheese on top.
- Repeat layering with remaining rice, chicken, beans, corn, creamy mixture, and finish with rest of the cheese.
- Cover with aluminum foil and bake for 30 minutes, until bubbling.
- Remove foil, sprinkle crushed Doritos on top, and bake for another 15-20 minutes until cheese is bubbly.
- Let the casserole rest for 10 minutes before serving.
