  • 20 whole baby bella mushrooms
For the Stuffing
  • 1 cup Italian cheeses (mozzarella, parmesan) feel free to substitute based on preference
  • 1 tablespoon fresh herbs (parsley, thyme) dried herbs can be used in a pinch
  • 2 cloves garlic swap with garlic powder if fresh is unavailable
  • 1 cup breadcrumbs adjust amount if mixture appears too moist
For the Finishing Touch
  • 3 tablespoons butter olive oil is a lighter alternative if preferred
  • 1 cup mozzarella cheese feel free to sprinkle more if you love that melty goodness

Method
 

Cooking Steps
  1. Preheat your oven to 350°F (175°C) and prepare a baking dish with non-stick spray.
  2. Gently clean the mushrooms and remove the stems.
  3. Pre-cook the mushroom caps upside down on a baking sheet for 5-7 minutes.
  4. In a mixing bowl, combine Italian cheeses, fresh herbs, minced garlic, and breadcrumbs.
  5. Stuff each mushroom cap with the filling and pack it well.
  6. Place the stuffed mushrooms in the baking dish and drizzle melted butter over them.
  7. Cover loosely with aluminum foil and bake for 20-30 minutes until tender.
  8. Remove foil, sprinkle mozzarella cheese, and bake uncovered for another 2-3 minutes.
  9. Allow cooling slightly before serving.
