- Preheat your oven to 375°F (190°C). Gather all ingredients and lightly grease your baking dish.
- In a large skillet over medium heat, cook the ground beef until browned, about 5-7 minutes. Drain excess fat, add taco seasoning and water. Simmer for 2-3 minutes.
- Stir in rinsed black beans, corn kernels, and drained diced tomatoes. Cook for another 2 minutes.
- Spread a thin layer of salsa in the baking dish. Layer tortillas, beef mixture, and cheese. Repeat until ingredients are used, finishing with cheese.
- Cover with foil and bake for 20 minutes. Remove foil and bake for another 10 minutes until cheese is melted and golden.
- Let it cool for 5-10 minutes before serving. Garnish with sliced green onions and fresh cilantro.
