  • 1 can Diced Tomatoes with Green Chilies ensure they’re drained
For the Cheese Layers
  • 2 cups Shredded Cheddar Cheese pairs well with Monterey Jack
  • 2 cups Shredded Monterey Jack Cheese add pepper jack for spice
For the Lasagna Structure
  • 10 sheets Flour Tortillas burrito-size works best
For the Garnishing
  • 1 cup Sour Cream serve extra on the side
  • 2 stalks Green Onions optional garnish
  • 1 bunch Fresh Cilantro sprinkle generously on top

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C). Gather all ingredients and lightly grease your baking dish.
  2. In a large skillet over medium heat, cook the ground beef until browned, about 5-7 minutes. Drain excess fat, add taco seasoning and water. Simmer for 2-3 minutes.
  3. Stir in rinsed black beans, corn kernels, and drained diced tomatoes. Cook for another 2 minutes.
  4. Spread a thin layer of salsa in the baking dish. Layer tortillas, beef mixture, and cheese. Repeat until ingredients are used, finishing with cheese.
  5. Cover with foil and bake for 20 minutes. Remove foil and bake for another 10 minutes until cheese is melted and golden.
  6. Let it cool for 5-10 minutes before serving. Garnish with sliced green onions and fresh cilantro.
