- In a small bowl, combine the ricotta cheese with a pinch of salt, black pepper, and any optional seasonings. Mix well for about 30 seconds.
- Spread a generous layer of the ricotta mixture on one side of each slice of bread. On one slice, layer the sun-dried tomatoes followed by spinach. Top with mozzarella or provolone, then place the other slice on top, ricotta side down.
- In a skillet, heat about a tablespoon of butter or olive oil over medium heat. Allow it to melt completely.
- Carefully place the assembled sandwich in the heated skillet. Cook for 4-5 minutes until golden brown; flip and cook the other side for an additional 4-5 minutes until cheese is melted.
