  • 1 cup Reserved Pasta Water Essential for achieving the right sauce consistency.
For the Sauce
  • Broccoli Frozen broccoli will work if fresh is unavailable.
  • 2 cloves Garlic Minced.
  • 1 tbsp Olive Oil For sautéing garlic.
  • 1 cup Parmesan Cheese Divided; use plant-based parmesan for a vegan version.
  • 2 tbsp Lemon Juice Brightens and balances the flavors.
For Topping
  • 2 tbsp Pine Nuts Optional; add crunch.
  • 1 tsp Salt Key seasoning.
  • ½ tsp Black Pepper Key seasoning.

Method
 

Cooking Steps
  1. Boil the Pasta: Fill a large pot with water, add salt, and bring it to a rolling boil. Once boiling, add 8 oz of pasta shells and cook for 8-10 minutes until al dente.
  2. Cook the Broccoli: During the last 3 minutes of cooking, add broccoli florets to the pot.
  3. Reserve and Drain: Reserve about 1 cup of pasta water, then drain the pasta and broccoli.
  4. Sauté the Garlic: In a skillet, heat olive oil and sauté minced garlic for 1-2 minutes until fragrant.
  5. Blend the Sauce: In a blender, combine half the broccoli, sautéed garlic, lemon juice, and half the parmesan. Blend until creamy.
  6. Combine the Ingredients: Return pasta and remaining broccoli to the skillet, pour in the blended sauce, and toss to coat.
  7. Adjust the Sauce: Add reserved pasta water gradually if the sauce is too thick.
  8. Serve and Garnish: Serve warm, garnished with additional parmesan, pine nuts, and black pepper.
