  • 1 can (14.5 oz) Petite Diced Tomatoes or crushed tomatoes
  • 1 cup Ketchup low-sugar varieties optional
  • 1 tbsp Brown Sugar reduce or omit for low-sugar
  • 1 tsp Yellow Mustard or Dijon mustard
  • Salt and Black Pepper to taste
  • 2 cups Frozen Whole-Kernel Corn or frozen peas
For the Casserole Base
  • 16 oz Penne Pasta or rotini/gluten-free pasta
For the Topping
  • 1.5 cups Shredded Colby-Jack Cheese or Monterey Jack/cheddar

Method
 

Step-by-Step Instructions for Sloppy Joe Casserole
  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet, heat olive oil over medium-high heat. Add ground beef, and cook for about 6-8 minutes, until browned.
  3. Add onion, green and red bell peppers, and garlic to the skillet. Cook for 5-7 minutes until vegetables are soft.
  4. Stir in diced tomatoes, ketchup, brown sugar, and mustard. Season with salt and pepper, let simmer for 10 minutes.
  5. In a pot of salted boiling water, add penne pasta and corn, cook for 8-10 minutes, then drain.
  6. In a mixing bowl, combine drained pasta and corn with beef mixture. Fold in the cheese.
  7. Grease the baking dish, spread mixture evenly, and bake for 20 minutes or until cheese is melted and bubbly.
