Preparation
- Preheat your oven to 350°F (176°C) and line a baking tray with aluminum foil.
- In a mixing bowl, combine all ingredients for the spice mix.
- Chop red potatoes, yellow onion, and carrots evenly, drizzle with olive oil, sprinkle with salt, and coat with spice mix.
- Spread seasoned vegetables across the bottom of the tray.
- Pat turkey legs dry, drizzle with olive oil, apply salt, and rub in the spice mix.
- Place turkey legs on top of vegetables and marinate at room temperature for 15 minutes.
- Cover with foil and bake in the oven for 2 hours for larger legs or 1 hour for smaller.
- Increase temperature to 400°F (200°C), remove foil, and bake for an additional 15 minutes.
- Remove from oven, let rest for 10 minutes before serving.
