Step‑by‑Step Instructions
  1. In a large stockpot, combine 10 cups of water, 2 bottles of lager, 1 package of Zatarain's seasoning, 4 tablespoons of hot sauce, 1 quartered large sweet onion, 1 halved lemon, 1 head of halved garlic, and 1 bay leaf. Bring to a boil, then reduce to simmer for 10 minutes.
  2. Add 1 pound of baby red potatoes to the broth and simmer for around 10 minutes or until nearly tender.
  3. Incorporate 3 ears of cut corn and 1 package of sausage into the pot. Stir and let simmer for another 10 minutes.
  4. Add 2 pounds of shrimp and cook until they turn pink and opaque, about 4 to 5 minutes. Drain in a colander.
  5. Melt ½ cup of unsalted butter in a small saucepan. Stir in 1 tablespoon of hot sauce and 1.25 teaspoons of Old Bay seasoning until fragrant.
  6. Serve the shrimp, potatoes, sausage, and corn on newspaper. Set dipping sauce on the side.
