Preparation
- Preheat your oven to 375°F (190°C) if baking the salmon balls.
- Dice the fresh salmon fillets into small pieces or pulse in a food processor until coarsely chopped.
- In a large mixing bowl, combine salmon, breadcrumbs, green onions, parsley, garlic, egg, mustard, lemon zest, salt, and pepper.
- Shape the mixture into golf ball-sized spheres, around 1 to 2 inches in diameter.
- For frying: Heat olive oil in a skillet and cook salmon balls for 3-4 minutes on each side.
- For baking: Arrange the balls on a baking sheet and bake for 15-20 minutes.
- While cooking, prepare the avocado sauce by blending avocado, Greek yogurt, lime juice, and cilantro until smooth.
- Serve salmon balls warm with the creamy avocado sauce for dipping.
