Steps
- Preheat the oven to 200°C (400°F). Line a baking sheet with aluminum foil and lightly spray with cooking spray.
- In a medium skillet, heat olive oil over medium heat. Sauté the finely diced onion and minced garlic for about 5 minutes until softened. Let cool.
- In a large mixing bowl, combine the ground chicken, cooled onion and garlic, seasoned breadcrumbs, milk, grated Parmesan, egg, chopped parsley, Italian seasoning, and salt. Mix gently.
- On the baking sheet, mold two-thirds of the meat mixture into a rectangular shape. Create a well in the center and place mozzarella sticks inside. Cover with remaining meat mixture.
- Spread marinara sauce over the top of the meatloaf. Bake for 45 minutes.
- In a small bowl, mix panko breadcrumbs, additional grated Parmesan, melted butter, and parsley for topping.
- After 45 minutes, sprinkle shredded mozzarella and breadcrumb mixture on top. Bake for another 15-20 minutes until cheese is melted and bubbly.
- Let the meatloaf rest for 10 minutes before slicing and serving.

Notes
Allow the sautéed onion and garlic to cool before mixing with the meat to avoid cooking the egg. Mix gently to keep the meatloaf tender. Make sure to seal the mozzarella filling properly to avoid leakage during baking.
