Step-by-Step Instructions for Greek Lemon Chicken
  1. In a small bowl, combine olive oil, lemon juice, minced garlic, oregano, thyme, Dijon mustard, salt, and pepper. Whisk until blended.
  2. Place chicken thighs in a large bowl and pour the marinade over them, massaging to coat. Cover and refrigerate for 1 to 2 hours.
  3. Preheat your oven to 350°F (180°C) and grease your baking dish.
  4. Transfer marinated chicken to the dish, skin-side up, and pour any leftover marinade over the top. Bake for 40 to 45 minutes until internal temperature reaches 175°F (80°C).
