- Grease your crockpot with cooking spray or a light layer of oil. Place the boneless, skinless chicken breasts at the bottom and season with salt, black pepper, garlic powder, onion powder, and poultry seasoning.
- In a medium bowl, mix the cream of chicken soup, cream of mushroom soup, sour cream, and chicken broth until smooth. Pour over the seasoned chicken in the crockpot.
- In another bowl, combine the stuffing mix, water, and melted butter until moistened. Spread the stuffing mixture over the creamy sauce in the crockpot.
- Cover the crockpot and cook on LOW for 6–7 hours or on HIGH for 3–4 hours, until the chicken reaches an internal temperature of 165°F.
- Once cooked, shred the chicken with two forks and mix it into the stuffing. Serve warm.
