Step-by-Step Instructions
  1. Heat a large skillet over medium-high heat. Add the ground beef, breaking it apart with a spatula as it cooks. Stir until browned, about 5 minutes.
  2. Sprinkle in the salt, black pepper, ground cumin, and dried oregano. Stir well and let flavors meld for another 2 minutes.
  3. Add the chopped onions, minced garlic, diced tomatoes, and potatoes into the skillet. Stir and cook for 3-4 minutes.
  4. Pour in one cup of water or beef broth, bring to a boil, then reduce to low. Cover and simmer for 15-20 minutes, until potatoes are fork-tender.
  5. Taste and adjust seasoning if needed. Garnish with fresh cilantro before serving.
  6. Serve hot over tortillas or with rice.
