  • 2 tablespoons Brown Sugar or Honey maple syrup for a vegan alternative
  • 2 tablespoons Rice Wine Vinegar apple cider vinegar as a substitute
  • 2 cloves Garlic (minced) fresh garlic recommended
  • 1 tablespoon Ginger (minced) fresh preferred, ground in a pinch
  • 1 teaspoon Sriracha Sauce adjust according to spice preference
Filling
  • 2 breasts Cooked Chicken (chopped) rotisserie chicken can save prep time
  • 3 cups Coleslaw Mix fresh cabbage or shredded carrots can be used
  • 1/2 cup Grated Carrot (optional) omit if desired
  • 1/4 cup Chopped Cilantro omit if not a fan
  • 1/4 cup Roasted Peanuts sunflower seeds are a good alternative
Wraps
  • 4-6 pieces Tortillas large lettuce leaves for a fresh, gluten-free option

Method
 

Preparation Steps
  1. In a medium bowl, whisk together peanut butter, soy sauce, brown sugar or honey, rice wine vinegar, minced garlic, minced ginger, and sriracha sauce. Adjust with water if needed.
  2. In a large mixing bowl, combine chopped chicken breasts, coleslaw mix, grated carrot, chopped cilantro, and roasted peanuts. Drizzle with dressing and toss to coat. Let sit for 5 minutes.
  3. Warm tortillas in the microwave for 30 seconds or on a skillet for 15 seconds per side to enhance pliability.
  4. Place filling onto each warmed tortilla. Fold in the sides and roll tightly to create a wrap.
  5. Slice the wraps diagonally if desired and serve with dipping sauce or cucumber salad.
