  • 2 medium Zucchini sliced into half-moons
  • 8 oz Mushrooms sliced button or cremini
  • 1 medium Onion thinly sliced
  • 2 tbsp Olive Oil or butter for richer flavor
  • 2 cloves Garlic minced
  • to taste Salt
  • to taste Pepper
  • 1 tsp Dried Thyme or fresh herbs
  • to taste Fresh Parsley optional garnish

Step-by-Step Instructions
  1. Wash the zucchinis, mushrooms, and onions thoroughly. Slice the zucchini into half-moons, thinly slice the onions, and clean the mushrooms. Mince the garlic.
  2. In a large skillet, heat 2 tablespoons of olive oil over medium heat until shimmering, about 1-2 minutes.
  3. Add the sliced onions to the skillet and sauté for about 3 minutes until translucent and slightly softened.
  4. Add minced garlic and sliced mushrooms. Sauté for 3-4 minutes until mushrooms are tender and have released moisture.
  5. Stir in zucchini slices, season with salt, pepper, and thyme. Sauté for 3-5 minutes until zucchini is tender but slightly crunchy.
  6. Taste and adjust seasoning. Optionally, add chopped fresh parsley before serving.

Notes
