  • 1 cup Cherry Tomatoes halved
  • 1 medium Red Onion diced, can substitute with yellow onion
  • 2 cloves Garlic minced
  • 1 cup Vegetable Broth or water
  • 2 tablespoons Balsamic Vinegar or lemon juice
  • 1 teaspoon Salt
  • 1/2 teaspoon Black Pepper adjust to taste
For the Topping
  • 1 cup Breadcrumbs panko preferred for extra crunch
  • 1/4 cup Nutritional Yeast or grated Parmesan for non-vegans

Method
 

Preparation Steps
  1. Preheat the oven to 375°F (190°C) and grease a baking dish.
  2. Wash and prepare the kale by stripping the leaves from stems and chopping into bite-sized pieces. Halve the cherry tomatoes, dice the red onion, and mince garlic.
  3. In a skillet, heat a splash of vegetable broth over medium-high heat, add kale, tomatoes, onion, and garlic. Sauté for 5–7 minutes until kale wilts.
  4. Stir in balsamic vinegar, salt, and pepper. Cook for an additional 2 minutes.
  5. Transfer the kale mixture to the greased baking dish, spreading it evenly.
  6. Combine breadcrumbs, nutritional yeast, and olive oil in a bowl. Mix until breadcrumbs are moistened, then sprinkle over kale mixture.
  7. Bake for 15–20 minutes until the topping is golden brown.
  8. Let cool for 2–3 minutes before serving.
