- Heat the oil in a large skillet or wok over medium heat until shimmering.
- Add the diced chicken breast and sauté for 5-7 minutes until golden brown. Remove and set aside.
- In the same skillet, add garlic and sauté for 30 seconds. Then add carrots, peas, and bell peppers; cook for 3-5 minutes until tender.
- Push veggies aside, add rice, break clumps with a spatula, and heat for 2-3 minutes.
- Stir in pineapple and cook for 2 minutes until caramelized.
- Mix soy sauce, fish sauce, and oyster sauce in a bowl; pour over rice mixture and toss.
- Add back the cooked chicken, stir to combine, and heat for another 2-3 minutes.
- Serve hot, garnished with green onions or cilantro as desired.
