Ingredients

  • 4 cups cooked jasmine rice Substitution: Basmati or long-grain rice can also work well.
  • 1 pound diced chicken breast Swap with tofu for a delicious vegetarian twist.
For the Sweetness
  • 1 cup diced pineapple Substitution: Using canned pineapple is fine; just ensure it’s well-drained.
For the Color and Texture
  • 1 cup diced carrots No direct substitution recommended; but feel free to use similar veggies.
  • 1 cup peas Substitution: Green beans or corn can be used in place of peas.
  • 1 cup diced bell peppers Substitution: Use any color bell pepper or omit if unavailable.
For Flavor Enhancement
  • 2 cloves minced garlic Fresh garlic is preferred; garlic powder will do in a pinch.
  • 3 tablespoons soy sauce Substitution: Tamari is a great gluten-free alternative.
  • 1 tablespoon fish sauce Leave it out for a vegetarian version; increase soy sauce instead.
  • 2 tablespoons oyster sauce Substitution: Vegetarian oyster sauce can replace this or increase the soy sauce.
For Cooking
  • 2 tablespoons vegetable oil Any neutral oil, such as canola or grapeseed, works beautifully.

Method
 

Cooking Instructions
  1. Heat the oil in a large skillet or wok over medium heat until shimmering.
  2. Add the diced chicken breast and sauté for 5-7 minutes until golden brown. Remove and set aside.
  3. In the same skillet, add garlic and sauté for 30 seconds. Then add carrots, peas, and bell peppers; cook for 3-5 minutes until tender.
  4. Push veggies aside, add rice, break clumps with a spatula, and heat for 2-3 minutes.
  5. Stir in pineapple and cook for 2 minutes until caramelized.
  6. Mix soy sauce, fish sauce, and oyster sauce in a bowl; pour over rice mixture and toss.
  7. Add back the cooked chicken, stir to combine, and heat for another 2-3 minutes.
  8. Serve hot, garnished with green onions or cilantro as desired.
