- In a large mixing bowl, whisk together 1 cup of all-purpose flour, 2 tablespoons of sugar, 1 tablespoon of baking powder, and a pinch of salt until well combined.
- In a separate bowl, beat one egg and mix in 1 cup of milk and 2 tablespoons of melted butter until smooth.
- Gently pour the wet mixture into the bowl of dry ingredients, and stir until just combined. Fold in your choice of fillings.
- In a deep frying pan, pour in about 2 inches of vegetable oil and heat it over medium heat until it reaches 350°F (175°C).
- Once the oil is hot, carefully drop spoonfuls of batter into the oil and cook each batch for about 2-3 minutes until golden brown.
- Using a slotted spoon, carefully remove the golden Pancake Poppers and place them on a plate lined with paper towels to drain excess oil.
