Preparation
  1. Preheat the oven to 350°F (175°C) and grease an 8 x 4-inch loaf pan.
  2. Mash enough ripe bananas to measure 1⅓ cups, about four small bananas.
  3. Whisk together the flour, baking soda, salt, and cinnamon in a separate bowl.
  4. Cream the softened butter, brown sugar, and granulated sugar until light and fluffy.
  5. Add the eggs one at a time, mixing well after each addition, then add vanilla extract.
  6. Fold the mashed bananas into the wet mixture gently.
  7. Incorporate the dry ingredients into the wet mixture until just combined.
  8. Pour the batter into the prepared loaf pan and smooth the top.
  9. Bake for 45–60 minutes, checking at the 45-minute mark for doneness.
  10. Let the banana bread cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
