Preparation

- Mash enough ripe bananas to measure 1⅓ cups, about four small bananas.
- Whisk together the flour, baking soda, salt, and cinnamon in a separate bowl.
- Cream the softened butter, brown sugar, and granulated sugar until light and fluffy.
- Add the eggs one at a time, mixing well after each addition, then add vanilla extract.
- Fold the mashed bananas into the wet mixture gently.
- Incorporate the dry ingredients into the wet mixture until just combined.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 45–60 minutes, checking at the 45-minute mark for doneness.
- Let the banana bread cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
