- Preheat your oven to 350°F (175°C) and prepare a 9x5 loaf pan by spraying it with nonstick spray and lining with parchment paper.
- Mash 3 extra ripe bananas in a large mixing bowl until smooth with a few lumps remaining.
- Add 1 cup of granulated sugar, 2 large eggs, 1 teaspoon of vanilla extract, and 1/3 cup of canola oil to the bananas; mix well.
- In a separate bowl, sift together 1 1/3 cups of flour, 1 teaspoon of baking soda, and 1/2 teaspoon of salt. Gradually add to the banana mixture.
- Gently stir the dry ingredients into the wet mixture until just combined.
- Pour the batter into the prepared loaf pan and smooth the top. Bake for 40-45 minutes.
- After baking, cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
