Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and prepare a 9x5 loaf pan by spraying it with nonstick spray and lining with parchment paper.
  2. Mash 3 extra ripe bananas in a large mixing bowl until smooth with a few lumps remaining.
  3. Add 1 cup of granulated sugar, 2 large eggs, 1 teaspoon of vanilla extract, and 1/3 cup of canola oil to the bananas; mix well.
  4. In a separate bowl, sift together 1 1/3 cups of flour, 1 teaspoon of baking soda, and 1/2 teaspoon of salt. Gradually add to the banana mixture.
  5. Gently stir the dry ingredients into the wet mixture until just combined.
  6. Pour the batter into the prepared loaf pan and smooth the top. Bake for 40-45 minutes.
  7. After baking, cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
