  • 2 cups Broccoli florets Green beans or asparagus can be alternatives.
For the Sauce
  • 3 tbsp Olive oil Avocado oil can also be used.
  • 3 cloves Garlic Fresh cloves are best.
  • 1 each Lemon Use fresh juice and zest.
  • 1/2 tsp Red pepper flakes Skip if you prefer milder flavors.
Seasoning & Garnish
  • 1 tsp Salt Adjust according to your taste.
  • 1 tsp Black pepper Freshly cracked preferred.
  • 1/2 cup Grated Parmesan cheese Nutritional yeast can be used for a dairy-free option.
  • 1/4 cup Fresh parsley Basil or cilantro can be used interchangeably.

Method
 

Step-by-Step Instructions
  1. Begin by bringing a large pot of salted water to a boil. Cook spaghetti according to package instructions until al dente, about 8-10 minutes.
  2. In the last 3-4 minutes of cooking, add broccoli florets to the pot.
  3. Reserve about ½ cup of the starchy pasta water before draining the spaghetti and broccoli.
  4. Drain the spaghetti and broccoli, then set aside.
  5. In the same pot, warm 3 tablespoons of olive oil over medium heat. Sauté minced garlic and red pepper flakes for 1-2 minutes.
  6. Return the drained spaghetti and broccoli to the pot. Toss with lemon juice and zest, adding reserved pasta water as needed.
  7. Sprinkle with salt and pepper, stirring to combine.
  8. Plate the pasta, topping with grated Parmesan cheese and fresh parsley.

Notes
