Step‑by‑Step Instructions
  1. Preheat your oven to 350°F (175°C) and prepare a muffin tin with silicone liners or cooking spray.
  2. In a large mixing bowl, combine almond flour, mozzarella, Parmesan, baking powder, garlic powder, Italian seasoning, salt, and pepper.
  3. In a separate bowl, whisk the eggs until light and fluffy. Gradually add to the dry ingredients until a thick batter forms.
  4. Fold in the pepperoni slices and marinara sauce, ensuring even distribution.
  5. Spoon the batter into prepared muffin cups, filling each about 3/4 full. Top with additional cheese if desired.
  6. Bake for 20-25 minutes. Check for doneness with a toothpick; it should come out clean.
  7. Remove from oven and cool for 5 minutes before transferring to a wire rack to cool completely.
