Preparation Steps
- Wash the Persian cucumbers thoroughly and slice them thinly, about 1/8 inch thick.
- Sprinkle salt over the sliced cucumbers and set aside for 10 minutes to draw out moisture.
- Gently blot the cucumber slices with a paper towel and transfer to a mixing bowl.
- Combine rice vinegar and sugar in a microwave-safe bowl, microwave for 30 seconds until warm, and stir until sugar dissolves.
- Add red onion and cilantro to the cucumbers, toss to combine.
- Pour the dressing over the cucumber mixture and stir to combine.
- Cover and chill in the refrigerator for at least 20 minutes.
- Before serving, stir the salad and sprinkle chopped peanuts on top.
