Method
 

Preparation Steps
  1. Wash the Persian cucumbers thoroughly and slice them thinly, about 1/8 inch thick.
  2. Sprinkle salt over the sliced cucumbers and set aside for 10 minutes to draw out moisture.
  3. Gently blot the cucumber slices with a paper towel and transfer to a mixing bowl.
  4. Combine rice vinegar and sugar in a microwave-safe bowl, microwave for 30 seconds until warm, and stir until sugar dissolves.
  5. Add red onion and cilantro to the cucumbers, toss to combine.
  6. Pour the dressing over the cucumber mixture and stir to combine.
  7. Cover and chill in the refrigerator for at least 20 minutes.
  8. Before serving, stir the salad and sprinkle chopped peanuts on top.
