Ingredients
  

For the Meatloaf
  • 1 lb Ground Chicken can substitute with ground turkey or pork
  • 1 cup Parmesan Cheese Romano cheese can be substituted
  • 1 cup Panko Breadcrumbs regular breadcrumbs can be used
  • 2 large Eggs fresh eggs preferred
  • 3 cloves Minced Garlic adjust based on taste
  • 1 tsp Garlic Powder omit if using fresh garlic
  • 1 tsp Onion Powder
  • 1 tsp Dried Basil fresh herbs can be substituted
  • 1 tsp Dried Parsley fresh herbs can be substituted
  • 1 tsp Salt adjust to taste
  • 1 tsp Black Pepper adjust to taste
  • 1/2 cup Whole Milk can use plant-based milk
  • 2 tbsp Unsalted Butter for the glaze
For the Glaze
  • 2 tbsp Unsalted Butter melt gently
  • 2 cloves Minced Garlic cook until fragrant
  • 1/4 cup Parmesan Cheese for mixing into glaze
  • 2 tbsp Fresh Parsley for garnish

Method
 

Directions
  1. Preheat your oven to 190°C (375°F) and prepare a baking sheet by lining it with parchment paper or greasing a loaf pan.
  2. In a large mixing bowl, combine ground chicken, Parmesan cheese, panko breadcrumbs, eggs, minced garlic, onion powder, garlic powder, dried basil, parsley, salt, and black pepper. Pour in the whole milk and gently mix until just combined.
  3. Shape the mixture into a loaf and place it onto your prepared baking sheet or greased loaf pan.
  4. Bake in the preheated oven for 40-45 minutes or until the internal temperature reaches 74°C (165°F) and the top is golden brown.
  5. While baking, melt unsalted butter in a saucepan and sauté minced garlic until fragrant, then stir in additional Parmesan cheese and fresh parsley.
  6. Brush the glaze over the meatloaf and return to the oven for an additional 5-7 minutes.
  7. Remove from the oven, let it rest for 5 minutes, slice, and garnish with extra parsley before serving.
