- In a mixing bowl, combine olive oil, fresh lime juice, minced garlic, chili powder, ground cumin, smoked paprika, salt, and black pepper. Whisk together until smooth.
- Place the chicken breasts in the slow cooker. Pour marinade over the chicken and coat evenly.
- Slice bell peppers and onions into strips and layer over the marinated chicken in the crockpot.
- Cover and cook on low for 4 to 6 hours or on high for 2 to 3 hours until the chicken is tender.
- Transfer chicken to a plate and shred with two forks. Return shredded chicken to the crockpot.
- Warm tortillas. Spoon chicken and veggie mixture onto each tortilla and top with cilantro, cheese, sour cream, and salsa.
