Ingredients
  

For the Chicken
  • 2 pounds boneless, skinless chicken breasts
  • 2 tablespoons olive oil can substitute with avocado oil
  • 1/4 cup fresh lime juice can substitute with fresh orange juice
  • 3 cloves minced garlic fresh preferred
For the Seasoning
  • 2 tablespoons chili powder adjust to taste
  • 2 teaspoons ground cumin can replace with coriander
  • 2 teaspoons smoked paprika or regular paprika for less smokiness
  • 1 teaspoon salt kosher salt can be used
  • 1/2 teaspoon black pepper
For the Veggies
  • 3 cups bell peppers (red, yellow, green) any combination
  • 1 large sliced onion red or yellow can be used
  • 2 medium jalapeños optional for heat
For Serving
  • 8 pieces flour or corn tortillas whole grain or low-carb options available
  • 1/4 cup fresh cilantro can substitute with parsley
  • 1/2 cup sour cream or Greek yogurt plain yogurt is lighter
  • 1 cup shredded cheese any preferred cheese
  • 1 cup salsa or pico de gallo homemade or store-bought

Method
 

Step-by-Step Instructions
  1. In a mixing bowl, combine olive oil, fresh lime juice, minced garlic, chili powder, ground cumin, smoked paprika, salt, and black pepper. Whisk together until smooth.
  2. Place the chicken breasts in the slow cooker. Pour marinade over the chicken and coat evenly.
  3. Slice bell peppers and onions into strips and layer over the marinated chicken in the crockpot.
  4. Cover and cook on low for 4 to 6 hours or on high for 2 to 3 hours until the chicken is tender.
  5. Transfer chicken to a plate and shred with two forks. Return shredded chicken to the crockpot.
  6. Warm tortillas. Spoon chicken and veggie mixture onto each tortilla and top with cilantro, cheese, sour cream, and salsa.
