Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C) and grease a baking dish with nonstick spray.
  2. In a skillet, heat a splash of oil and sauté the diced onions for about 5 minutes until soft.
  3. In a mixing bowl, combine ground chicken, sautéed onions, minced garlic, breadcrumbs, eggs, soy sauce, salt, pepper, and half of the Parmesan cheese. Mix gently.
  4. Transfer the mixture to the greased baking dish, shaping it into a loaf.
  5. Sprinkle the remaining Parmesan cheese and optionally paprika or Italian seasoning over the meatloaf.
  6. Bake in the preheated oven for 45-50 minutes, checking for an internal temperature of 165°F (74°C).
