Step-by-Step Instructions
- In a large mixing bowl, combine the ground chicken, finely chopped onion, minced garlic, chopped parsley, ground cumin, ground coriander, salt, and black pepper. Mix thoroughly for about 2-3 minutes.
- Wet your hands to prevent sticking, shape the chicken mixture into elongated ovals or patties, about 2-3 inches long, aiming for 10-12 koftas.
- Preheat your grill or grill pan over medium-high heat, brushing generously with olive oil.
- Carefully place the kofta on the hot grill and grill for 5-7 minutes on each side until golden brown and cooked through.
- While the kofta is grilling, mix together plain yogurt, lemon juice, and a pinch of salt. Optional: add minced garlic.
- Once cooked, remove the kofta from the grill and let rest for a minute. Serve with the garlic yogurt sauce.

Notes
Use fresh ingredients for better flavor. Don't overmix the meat to keep kofta tender. Pair with a salad or pita for a complete meal.
