Method
 

Step-by-Step Instructions
  1. In a large mixing bowl, combine the ground chicken, finely chopped onion, minced garlic, chopped parsley, ground cumin, ground coriander, salt, and black pepper. Mix thoroughly for about 2-3 minutes.
  2. Wet your hands to prevent sticking, shape the chicken mixture into elongated ovals or patties, about 2-3 inches long, aiming for 10-12 koftas.
  3. Preheat your grill or grill pan over medium-high heat, brushing generously with olive oil.
  4. Carefully place the kofta on the hot grill and grill for 5-7 minutes on each side until golden brown and cooked through.
  5. While the kofta is grilling, mix together plain yogurt, lemon juice, and a pinch of salt. Optional: add minced garlic.
