  • 2 tbsp Brown Sugar
  • 4 cloves Garlic minced
  • 1 inch Ginger grated
  • 1 tbsp Red Food Coloring (optional)

  • 2 lbs Chicken Thighs bone-in, skin-on preferred
  • 2 lbs Chicken Breasts optional

Method
 

Preparation
  1. In a large mixing bowl, combine all marinade ingredients and whisk until smooth.

  2. Coat chicken thighs thoroughly in the marinade and refrigerate for at least 4 hours.

  3. Preheat the oven to 400°F (200°C) and prepare a wire rack over a foil-lined baking tray.

  4. Remove chicken from marinade, allowing excess to drip off, and arrange on the wire rack.

  5. Bake for 25-30 minutes, checking for a glossy, caramelized exterior.
