  • 4 large Eggs try scrambled tofu for a vegan option
  • 2 slices Cheddar or Swiss Cheese or favorite vegan cheese
  • 1 medium Avocado or use hummus for a lighter sandwich
  • 1 cup Baby Spinach kale or arugula can be used instead
  • 1 cup Black Beans lentils or chickpeas can be used
  • ¼ cup Hummus any flavor of hummus or Greek yogurt can substitute
  • 1 tablespoon Olive Oil or cooking spray for a lighter option
  • to taste Salt add a pinch of smoked paprika for extra flavor
  • to taste Black Pepper

Method
 

Cooking Instructions
  1. Begin by slicing the whole wheat English muffins in half and toasting them for about 3-5 minutes until golden brown and slightly crispy.
  2. Heat olive oil in a skillet over medium heat. Crack the eggs in, season with salt and black pepper, and cook for about 3-4 minutes.
  3. Assemble the sandwiches by laying a slice of cheese on the bottom of each toasted muffin half, followed by fresh spinach, avocado, and black beans.
  4. Spread hummus on the top half of the muffin, place it on the sandwich, and gently press down.
  5. Serve warm, sliced in half if desired.
