Method
 

Cooking Steps
  1. Marinate chicken with salt, black pepper, and Jamaican curry powder for at least 30 mins.
  2. Heat vegetable oil in a large pot and bloom Jamaican curry powder for 30 seconds.
  3. Add marinated chicken and brown on each side for 3-4 minutes.
  4. Sauté aromatics and vegetables for about 5 minutes until onions are translucent.
  5. Combine chicken with sautéed ingredients, add Scotch bonnet pepper, allspice, carrots, broth, and coconut milk, then simmer.
  6. Add cubed potatoes, cover, and simmer for 30-40 minutes until chicken is tender.
  7. Remove Scotch bonnet pepper, adjust seasonings, and serve hot over rice.
