- Marinate chicken with salt, black pepper, and Jamaican curry powder for at least 30 mins.
- Heat vegetable oil in a large pot and bloom Jamaican curry powder for 30 seconds.
- Add marinated chicken and brown on each side for 3-4 minutes.
- Sauté aromatics and vegetables for about 5 minutes until onions are translucent.
- Combine chicken with sautéed ingredients, add Scotch bonnet pepper, allspice, carrots, broth, and coconut milk, then simmer.
- Add cubed potatoes, cover, and simmer for 30-40 minutes until chicken is tender.
- Remove Scotch bonnet pepper, adjust seasonings, and serve hot over rice.
