- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, whisk together the granulated sugar, lime zest, and a pinch of salt. Add melted butter, lime juice, vanilla extract, and eggs, whisk until fully combined.
- In a separate bowl, whisk together the flour and baking powder. Gradually add to the wet mixture until just combined.
- Add green food coloring, mixing until desired hue. Cover with plastic wrap and chill for at least 4 hours.
- Once chilled, scoop tablespoon-sized dough portions, roll into balls, and coat in powdered sugar.
