  • 1 lb Shrimp peeled and deveined
  • 1 cup Bell Peppers diced
  • 1 cup Scallions sliced
  • 2 tbsp Oil for cooking
  • 3 cups Cooked Rice preferably cold
  • 2 tbsp Soy Sauce
  • 1 tbsp Fish Sauce
  • 1 tbsp Lime Juice freshly squeezed

Cooking Steps
  1. Gather all ingredients for the Easy Thai Shrimp Fried Rice, and prepare the shrimp and vegetables.
  2. Heat 1 tablespoon of oil in a skillet over medium-high heat, add the shrimp and stir-fry for 2-3 minutes until pink and opaque, then remove shrimp and set aside.
  3. In the same skillet, add another tablespoon of oil and the diced vegetables; sauté for 3-4 minutes until tender but crisp.
  4. Add the cold cooked rice to the skillet, stir to combine, and heat through for about 2 minutes.
  5. Pour soy sauce, fish sauce, and lime juice over the rice, and stir well for 1-2 minutes, adjusting seasoning as needed.
  6. Fold the cooked shrimp back into the rice mixture and warm for another 1-2 minutes.
  7. Remove from heat, garnish with scallions and serve hot.
