For the Pasta
  • 8 oz penne, rigatoni, or spaghetti forms the base of your dish
For the Spinach Sauce
  • 1 Tbsp Olive Oil for sautéing garlic and spinach
  • 2-3 cloves Garlic minced
  • 9 oz Fresh Baby Spinach a nutrient powerhouse
  • ¼ tsp Fine Salt to season the sauce
  • 5 oz Cream Cheese for a creamy base
  • 1 oz Parmesan Cheese freshly grated
  • ¼ tsp Nutmeg adds warmth and sweetness
  • Black Pepper to taste

Method
 

Step-by-Step Instructions
  1. Bring a large pot of salted water to a boil. Add 8 oz pasta and cook until al dente, 8-10 minutes. Reserve at least ½ cup of pasta water, then drain.
  2. In a skillet, heat 1 Tbsp of olive oil over medium heat. Add minced garlic and sauté for 1-2 minutes.
  3. Add 9 oz spinach to the skillet, seasoning with ¼ tsp fine salt. Stir until wilted, about 2-3 minutes.
  4. Lower heat, add 5 oz cream cheese and ⅓ cup reserved pasta water. Mix until creamy.
  5. Mix in 1 oz parmesan and ¼ tsp nutmeg. Adjust seasoning with salt or black pepper.
  6. Add drained pasta to the skillet, tossing to coat in the sauce. Serve immediately.
