Step-by-Step Instructions
- Bring a large pot of salted water to a boil. Add 8 oz pasta and cook until al dente, 8-10 minutes. Reserve at least ½ cup of pasta water, then drain.
- In a skillet, heat 1 Tbsp of olive oil over medium heat. Add minced garlic and sauté for 1-2 minutes.
- Add 9 oz spinach to the skillet, seasoning with ¼ tsp fine salt. Stir until wilted, about 2-3 minutes.
- Lower heat, add 5 oz cream cheese and ⅓ cup reserved pasta water. Mix until creamy.
- Mix in 1 oz parmesan and ¼ tsp nutmeg. Adjust seasoning with salt or black pepper.
- Add drained pasta to the skillet, tossing to coat in the sauce. Serve immediately.
