- Bring a large pot of salted water to a boil. Add rotini pasta and cook for 8-10 minutes. Drain and rinse under cold water.
- Chop cucumber, grapes tomatoes, bell pepper, and red onion into small pieces. Place in a large mixing bowl.
- Add the cooled pasta to the vegetables in the bowl. Pour in the Italian dressing, followed by feta, olives, and parsley.
- Season with salt and black pepper to taste, and gently toss to combine everything evenly.
- Refrigerate for 30 minutes if possible to meld flavors; otherwise serve immediately.
