  • 2 large English Cucumbers sliced
  • 1 teaspoon Salt for drawing moisture
  • 1/4 cup Chopped Fresh Parsley or cilantro
  • 1/2 cup Toasted Chopped Peanuts ensure toasted
For the Dressing
  • 1/4 cup Low-Sodium Soy Sauce or tamari for gluten-free
  • 2 tablespoons Rice Vinegar or apple cider vinegar
  • 1/2 cup Creamy Peanut Butter or almond butter
  • 1 tablespoon Honey or maple syrup for vegan
  • 1 clove Garlic minced

Method
 

Preparation
  1. Slice the cucumbers into thin rounds and sprinkle salt over them. Toss gently and let drain in a colander for at least 1 hour.
  2. In a mixing bowl, whisk together soy sauce, rice vinegar, peanut butter, honey, garlic, red pepper flakes, and black pepper until smooth.
  3. Transfer drained cucumbers to a bowl, add peanuts and parsley, and drizzle dressing over. Toss gently to combine.
