- Grate the zucchinis, squeeze out excess moisture, and set aside.
- Combine self-raising flour, salt, pepper, and onion in a bowl, mix well, then fold in cheddar cheese.
- Incorporate the drained zucchini into the dry mixture gently.
- In another bowl, beat the eggs, vegetable oil, and parsley together until blended.
- Pour the wet mixture into the dry mixture and mix until just combined.
- Transfer the mixture to the prepared baking dish and smooth the top.
- Bake for 30-35 minutes until golden brown and a toothpick comes out clean.
- Cool in the dish for about 10 minutes before transferring to a wire rack to cool completely.
