Method
 

Baking Instructions
  1. Preheat the oven to 180°C (350°F) and line an 8x8 inch baking dish with parchment paper.
  2. Grate the zucchinis, squeeze out excess moisture, and set aside.
  3. Combine self-raising flour, salt, pepper, and onion in a bowl, mix well, then fold in cheddar cheese.
  4. Incorporate the drained zucchini into the dry mixture gently.
  5. In another bowl, beat the eggs, vegetable oil, and parsley together until blended.
  6. Pour the wet mixture into the dry mixture and mix until just combined.
  7. Transfer the mixture to the prepared baking dish and smooth the top.
  8. Bake for 30-35 minutes until golden brown and a toothpick comes out clean.
  9. Cool in the dish for about 10 minutes before transferring to a wire rack to cool completely.
  10. Slice into squares or rectangles and serve warm or at room temperature.
