  • 3 large Eggs
  • 1/4 cup Vegetable Oil
  • 1/4 cup Parsley Substitute with basil or thyme

  • 1 cup Bell Peppers Finely chopped

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 180°C (350°F) and prepare an 8x8 inch baking dish by lining it with parchment paper.
  2. Grate the fresh zucchini and squeeze out excess moisture using a clean kitchen towel.
  3. In a mixing bowl, combine self-raising flour, salt, pepper, and finely chopped onion. Stir together.
  4. Fold in grated cheddar cheese into the dry ingredients.
  5. Gently fold in the squeezed zucchini into the mixture.
  6. In a separate bowl, whisk together eggs, vegetable oil, and chopped parsley.
  7. Pour the wet mixture over the dry ingredients and zucchini, folding gently until combined.
  8. Transfer the batter into the prepared baking dish and smooth the top. Bake for 30-35 minutes.
  9. Once baked, cool in the dish for 10 minutes, then transfer to a wire rack to cool further.
