  2. Grease a 9x13-inch baking dish with olive oil.
  3. In a large mixing bowl, combine rice, chicken, salsa, corn, black beans, half of the cheddar cheese, and spices.
  4. Pour the mixture into the greased baking dish spreading it evenly.
  5. Sprinkle the remaining cheddar cheese on top.
  6. Cover with foil and bake for 25 minutes.
  7. Uncover and bake for an additional 10-15 minutes until cheese is bubbly and golden brown.
  8. Allow to cool for 5 minutes before serving.
