Step-by-Step Instructions
  1. Begin by lining a 9x13 inch baking pan with a silicone mat or aluminum foil, greased lightly if using foil. Preheat your oven to 350°F (175°C).
  2. Lay out the Ritz crackers in a single, even layer on the prepared baking sheet.
  3. In a medium saucepan, combine the salted butter, light brown sugar, and optional vanilla extract. Heat over medium until bubbling, stirring constantly for about 5 minutes until thick and golden.
  4. Carefully pour the toffee mixture evenly over the arranged crackers and spread gently. Bake for 5 minutes.
  5. Remove from the oven, immediately sprinkle the chopped dark chocolate over the bubbling toffee, and return to the oven for 3-5 minutes until melted.
  6. Spread the melted dark chocolate evenly over the toffee layer. Chill in the refrigerator for 30 minutes.
  7. Melt the chopped white chocolate in a microwave-safe bowl, heating in short intervals until smooth. Mix in the peppermint extract.
  8. Pour the melted white chocolate over the set dark chocolate layer and spread evenly. Sprinkle crushed candy canes on top.
  9. Return to the refrigerator for an additional 30 minutes to set.
