- In a large mixing bowl, combine diced shrimp, ground pork, shredded cabbage, green onions, ginger, sesame oil, mirin, kosher salt, and black pepper. Mix gently until combined.
- Lay out wonton wrappers on a flat surface. Spoon about 1 tablespoon of shrimp filling into each. Wet edges and fold into a half-moon shape, sealing well.
- Heat vegetable oil in a large skillet over medium heat. Test oil by dropping in a small piece of wrapper; it should sizzle.
- Fry dumplings in a single layer for 2-3 minutes until golden brown. Flip and cook the other side for another 2-3 minutes.
- Transfer cooked dumplings to a paper towel-lined plate to drain excess oil. Serve hot with soy sauce or your favorite dipping sauce.
