Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C).
  2. Wash and slice the zucchini thinly. Halve the cherry tomatoes and sauté onion if using.
  3. In a bowl, whisk together eggs, milk, garlic, salt, pepper, and herbs until frothy. Stir in half of the cheese.
  4. Grease a baking dish. Spread the zucchini, tomatoes, and onion evenly.
  5. Pour the egg mixture over the vegetables and sprinkle remaining cheese on top.
  6. Bake for 35-40 minutes until golden brown and set in the center.
  7. Let it cool for 10 minutes before slicing. Serve warm, at room temperature, or chilled.
