Ingredients
  

For the Chicken
  • 1.5 lbs Chicken breast Frozen works too if thawed first.
  • 1.5 cups Chicken broth Vegetable broth can be used for a vegetarian version.
For the Sauce
  • 2 cups Marinara sauce Use homemade or store-bought.
  • 1 tsp Garlic powder Substitute with fresh minced garlic if preferred.
  • 1 tsp Onion granules Onion powder works too.
  • 1 tsp Italian seasoning mix Fresh herbs can also be used.
  • 0.5 tsp Paprika Smoked paprika can add extra flavor.
  • 0.25 tsp Red chili flakes Increase amount for more spice.
For the Tortellini
  • 1 lb Cheese tortellini Frozen tortellini is a shortcut; adjust cooking time.
  • 1 cup Mozzarella cheese, shredded Low-fat cheese optional.
  • 0.5 cup Heavy cream Half-and-half can be a substitute.
For Freshness
  • 2 cups Baby spinach Kale or other leafy greens can be used.
  • 0.33 cup Parmesan cheese, grated Nutritional yeast can be used for a dairy-free version.

Method
 

Step-by-Step Instructions
  1. Spray the interior of the slow cooker with olive oil spray.
  2. Layer the chicken breasts in the bottom of the slow cooker.
  3. Pour marinara sauce and chicken broth over the chicken.
  4. Sprinkle garlic powder, onion granules, Italian seasoning, paprika, and red chili flakes on top.
  5. Cover and cook on LOW for 4 hours until chicken is fork-tender.
  6. Remove chicken, shred it, and return it to the slow cooker.
  7. Stir in cheese tortellini, mozzarella, and heavy cream.
  8. Cover and cook for an additional 30 minutes.
  9. Stir in baby spinach and cover for another 10 minutes.
  10. Add grated Parmesan cheese and mix well before serving.
