- Prepare seasoning mix by combining garlic powder, onion powder, smoked paprika, cayenne pepper, salt, and black pepper in a small bowl.
- Heat olive oil in a large skillet over medium-high heat, add diced onion and sauté for 2 minutes, then add minced garlic for 30 seconds.
- In the same skillet, sear seasoned chicken thighs skin-side down for 5–7 minutes until crispy, then flip and cook for another 5 minutes.
- Melt butter in the skillet, whisk in flour, cook for 1 minute, then gradually add milk until thick and smooth. Stir in reserved seasoning mix and Better Than Bouillon.
- Return chicken to skillet with onion and garlic, add sliced mushrooms, and simmer for 30 minutes.
- Remove chicken and layer bok choy over gravy; steam covered for about 6 minutes until tender.
