For the Vegetables
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 8 ounces mushrooms sliced
  • 1 bunch baby bok choy cleaned and cut
For the Gravy
  • 4 tablespoons unsalted butter
  • 1/4 cup flour use cornstarch for gluten-free
  • 2 cups milk or substitute with almond/coconut milk
  • 1 tablespoon Better Than Bouillon Chicken Base or chicken broth

Step‑by‑Step Instructions
  1. Prepare seasoning mix by combining garlic powder, onion powder, smoked paprika, cayenne pepper, salt, and black pepper in a small bowl.
  2. Heat olive oil in a large skillet over medium-high heat, add diced onion and sauté for 2 minutes, then add minced garlic for 30 seconds.
  3. In the same skillet, sear seasoned chicken thighs skin-side down for 5–7 minutes until crispy, then flip and cook for another 5 minutes.
  4. Melt butter in the skillet, whisk in flour, cook for 1 minute, then gradually add milk until thick and smooth. Stir in reserved seasoning mix and Better Than Bouillon.
  5. Return chicken to skillet with onion and garlic, add sliced mushrooms, and simmer for 30 minutes.
  6. Remove chicken and layer bok choy over gravy; steam covered for about 6 minutes until tender.
  7. Serve chicken hot, spooning gravy over the top.
