For the Coating
  • 3 tablespoons All-Purpose Flour
  • 4 tablespoons Cornstarch
For Frying

Step-by-Step Instructions
  1. Marinate the Wings: Combine chicken wings with garlic, scallion, Shaoxing wine, soy sauce, oyster sauce, and salt. Marinate for 2 hours or overnight.
  2. Coat the Wings: Drain excess marinade, mix flour and water into a sticky batter, then add cornstarch and toss to coat wings.
  3. First Fry (Low Temperature): Heat oil to 320°F (160°C). Fry wings in batches for 3 minutes, stir gently, and drain on wire rack.
  4. Second Fry (High Temperature): Increase oil to 350°F (180°C). Fry wings for 2 minutes until deep golden brown and crispy, then drain.
  5. Serve: Enjoy wings hot as is or with your favorite dipping sauce.
