  • 1 to 1.5 pounds boneless, skinless chicken breasts or thighs cut into bite-sized pieces
  • 1 cup Greek yogurt or unsweetened coconut yogurt for dairy-free
  • 1 medium cucumber seeded and finely diced
  • 2 cloves garlic freshly minced
  • 1 tablespoon lemon juice always use fresh
  • 2 tablespoons fresh dill or substitute with dried dill
  • 2 tablespoons olive oil
  • to taste salt
  • to taste pepper
  • ¾ cup crumbled feta cheese reserve some for topping or omit for a lighter version
  • 1 cup halved cherry tomatoes
  • ½ medium red onion finely diced
  • ½ cup chicken broth low sodium preferred
  • 1 tablespoon cornstarch for thickening the sauce
  • ½ cup panko breadcrumbs optional, for topping

Method
 

Step-by-Step Instructions
  1. Preheat oven to 375°F (190°C) and grease a 9x13-inch baking dish with olive oil.
  2. In a mixing bowl, whisk together Greek yogurt, minced garlic, lemon juice, dill, and olive oil. Season with salt and pepper.
  3. In another bowl, mix chicken broth with cornstarch. Pour into the tzatziki sauce, stirring continuously.
  4. Fold in cucumber, red onion, cherry tomatoes, and feta cheese into the sauce mixture.
  5. Add chicken pieces to the sauce and coat well.
  6. Transfer the mixture to the baking dish. If desired, toss panko breadcrumbs with olive oil and sprinkle on top.
  7. Cover with foil and bake for 25 minutes.
  8. Uncover, sprinkle remaining feta cheese, and bake for another 15-20 minutes until golden brown and chicken is cooked through.
  9. Let rest for 5-10 minutes before serving.
