- Preheat oven to 375°F (190°C) and grease a 9x13-inch baking dish with olive oil.
- In a mixing bowl, whisk together Greek yogurt, minced garlic, lemon juice, dill, and olive oil. Season with salt and pepper.
- In another bowl, mix chicken broth with cornstarch. Pour into the tzatziki sauce, stirring continuously.
- Fold in cucumber, red onion, cherry tomatoes, and feta cheese into the sauce mixture.
- Add chicken pieces to the sauce and coat well.
- Transfer the mixture to the baking dish. If desired, toss panko breadcrumbs with olive oil and sprinkle on top.
- Cover with foil and bake for 25 minutes.
- Uncover, sprinkle remaining feta cheese, and bake for another 15-20 minutes until golden brown and chicken is cooked through.
