For the Cauliflower
  • 1 head Cauliflower cut into bite-sized pieces
  • 2 tablespoons Olive Oil for roasting
  • 1 teaspoon Salt
  • 1/2 teaspoon Black Pepper to taste
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Onion Powder
For the Cheese Sauce
  • 1 cup Heavy Whipping Cream
  • 8 ounces Cream Cheese softened
  • 1 cup Cheddar Cheese shredded
  • 1 cup Gruyere Cheese shredded
  • 1 cup Monterey Jack Cheese shredded
  • 1 teaspoon Paprika optional for topping

Method
 

Preparation
  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. In a large bowl, toss cauliflower pieces with olive oil, salt, black pepper, garlic powder, and onion powder. Spread on the baking sheet and roast for 15-20 minutes until golden brown.
  3. In a pot over low heat, combine heavy whipping cream and cream cheese, whisking until smooth, about 3-5 minutes.
  4. Gradually stir in shredded cheddar, gruyere, and Monterey Jack cheeses until melted and creamy, about 5-7 minutes.
  5. Gently fold roasted cauliflower into cheese sauce, serving hot with a sprinkle of paprika on top.
