- Begin by bringing a large pot of salted water to a boil over high heat. Once boiling, add your favorite uncooked dry pasta and cook according to package instructions until al dente, usually about 8-10 minutes. When done, drain the pasta in a colander, reserving a small cup of the pasta cooking water, and set it aside to cool slightly.
- While the pasta cooks, grab a blender or food processor. Add the ripe avocado, olive oil, grated Parmesan or Romano cheese, garlic, fresh herbs, and lemon juice. Blend on high for about 30-60 seconds until the mixture is smooth and creamy.
- In a large mixing bowl, transfer the drained pasta and pour the creamy avocado sauce over it. Toss the pasta gently to coat it evenly with the sauce, adding a splash of reserved pasta water if needed.
- Taste your creamy avocado pasta and season it generously with salt and freshly ground black pepper according to your preference. If desired, sprinkle with extra grated cheese for added flavor. Serve immediately.
