Cranberry Layer Preparation
- Combine 2 cups of fresh cranberries, ½ cup of brown sugar, and ¼ cup of orange juice over medium heat. Cook for about 10 minutes.
- Remove from heat and let cool completely.
Coffee Preparation
- Brew 1 cup of strong coffee and mix in 2 tablespoons of granulated sugar until dissolved. Allow to cool.
Whip the Cream
- In a large mixing bowl, whip 1 cup of heavy cream and 1 teaspoon of vanilla on medium-high speed until soft peaks form.
Mascarpone Mixture
- In another bowl, whisk together 1 cup of mascarpone cheese and 2 large egg yolks until smooth. Fold in whipped cream in two batches.
Assemble the Tiramisu
- Dip ladyfingers in cooled coffee for 2-3 seconds. Layer half in the serving dish, followed by half of the cranberry mixture and half of the mascarpone cream. Repeat layering.
Chill and Set
- Cover and refrigerate for at least 4 hours or overnight.
Garnish and Serve
- Dust with cocoa powder and add chocolate shavings before serving.
